
1 1/4 cup of all-purpose flour
1/2 teaspoon of salt
1 tablespoon of baking powder
1 1/4 teaspoon of white sugar
1 cup of milk
1 egg
1/2 tablespoon of butter, melted
1/2 cup of blueberries, washed
Directions:
In a large bowl sift flour, sugar, baking powder, and salt. In a separate bowl, beat egg and add milk to it. Pour milk/egg mix into flour mixture and stir well. Add in melted butter, stir, then fold in blueberries. Heat griddle or pan over stove on medium-low and coat bottom of pan with a slice of butter or cooking spray. Pour a circle of batter onto pan and brown on both sides of pancake. Serve with maple syrup, fruit, or powdered sugar.
