A few days ago, I went to a local cafe here in RVA called Urban Farmhouse. If you visit Richmond, it's a must! The food is amazing and the hot drinks are even better. They often have live music, which is something a couple girlfriends and I plan to take advantage of on our next knitting night. The last time I went there I got their caramel apple cider. I have had caramel cider in the past, but their cider just hit the spot! It struck an idea in me to spice up my own cider recipe with a little caramel. Making your own caramel is actually a lot easier than one would think, and this recipe is totally worth it! Not to say mine is better than Urban's, because it should definitely not take the place of your visit there, but it is a pretty dang good knock-off!
Caramel Apple Cider
1/4 cup white sugar
2 tblspn water
1/4 cup of heavy cream
2 tsp vanilla extract
2 cups apple juice by simple apple
bring sugar & water to a boil in a small saucepan over stove, stirring often
once it comes to a boil reduce the heat to medium-low and let simmer without stirring for 5 minutes or until color has turned amber brown
once it has turned it's color, add the vanilla and heavy cream
add your apple juice and let it come to a boil, and wait about 5 minutes before drinking!
